Baked Penne

Hi! It's Jilly. A while ago I posted my Easy Peasy 12 Day Menu Plan. In that post I promised I would post the Baked Penne Recipe soon. Well, today's the day I deliver on that promise! Yay!

I got this recipe from my friend Kelli, who is an angel and super mama to three little girls. It is seriously soooo easy to make, and the kids love it!

Baked Penne from Hi! It's Jilly


Baked Penne

Ingredients:
1 lb penne pasta
1 jar of Spaghetti Sauce
½ carton Ricotta cheese
½ cup Parmesan Cheese
1 egg
1 TB Italian Seasoning
Mozzarella cheese (optional)

Directions:
1. Preheat oven to 350 degrees. Cook the pasta al dente (1 min less than it says on the box)
2. Mix together the cheeses, egg, and Italian seasoning.
3. Spoon a thin layer of spaghetti sauce in the bottom of a 9x13 pan.
4. Layer pasta, spaghetti sauce, then the cheese mix. Repeat. (so in the pan you have a little sauce, then pasta, sauce, cheese, pasta, sauce, cheese)
5. Top with some shredded mozzarella cheese. (optional)
6. Bake for about 15-20 mins, until nice & bubbly and golden brown on top.

I Left My Heart in Arizona...

Hi! It's Jilly. We have lived here in New York for almost 10 months now. But, I still have days where my heart aches for Arizona. The people. The weather. The shopping. Did I mention the people? And the weather? Augh! My heart aches!

Note 2:  To my NY friends...Just because I have written this post does not mean I hate everything and everyone in New York and think it is stinky and poopy. I actually really like it here, and love all the awesome people I've met. It's just hard to say goodbye to the place we made our home for the last four years. Kapeesh?

Cruise Recap Part 3- St. Thomas

Hi! It's Jilly. I still need to finish telling you guys about our cruise! Last recap I told you about Coco Cay, our first stop. Our second stop was in St. Thomas. First, we went on a snorkeling excursion. They took us out on a catamaran to Buck Island to snorkel by a sunken shipwreck. *insert "Ooh"s and "Ah"s here*

I am a big, 'ole chicken, so every time we snorkel it is a huge deal for me. I am terrified of drowning, and I always have at least one "near-death" experience every time we snorkel. Okay, not near-death, but if I get any water in my mouth via the snorkeling tube I freak out and start hyperventilating. But, if you're like me and afraid of snorkeling, you should try it in the Caribbean. The water is so salty that you just float on top of the water. That is a comforting thing!

On the way back the crew was serving everybody rum punch, so some of our fellow snorkelers were getting quite...silly. We don't drink, so every time we asked for more Sprite they'd say, "Are you sure?!". It was kinda funny.

After we got back we walked around a couple shops, then hitched a ride downtown. Holy cow! The taxis there are kinda crazy! They are basically trucks with benches in the back. No doors. No seatbelts. And, they drive so fast I thought we were going to fall out!

When we got downtown we only made it to one store because all the rest were closed!! We were, like, "It's only 4:00!". I guess in the islands the stores close really early. We thought about hiking up the "99 steps", but the people working in the shop told us it was a bad idea because it would be dark soon and the crime is really bad once the sun goes down. Our taxi driver wanted to take us back to the ship, but we told him we would just walk, since it wasn't very far. He thought we were crazy. Although, I don't know how much of his "concern" for us was based on losing 2 fares!

The walk back was so nice. It was a beautiful evening. Along the way we passed this neat building that used to be an old prison. A nice local walking by took our picture for us, then walked part of the way back with us, chatting about what it was like to live there. That was pretty cool.

On our way back to the ship I was able to text my sister and check on the kids, since St. Thomas is part of the US Virgin Islands. Everything was going great at home. The kids were having a fun time with their Aunt Lizzy. They were playing in the snow while we were swimming. Ha ha!

All in all it was a pretty good day. I wish we'd had a little more time to explore St. Thomas. Perhaps we will make it there again someday. Who knows?

Next time I'll tell you about our stop in St.Martin/St. Maarten...where we almost missed the ship!

Mothers of Multiples FAQ

Hi! It's Jilly. As a mother of triplets I get asked a lot of questions. A lot of the same questions over and over...and over again! Some are "normal", some funny, and some are just plain dumb. I'd like to answer some of those questions for you now.

Notes:
#1- I wouldn't actually answer most questions this way. These are just responses I *wish* I could give sometimes.
#2- If you are a friend of mine, I am not annoyed if you've asked me these questions. But, when random strangers stop me in the grocery store when I am clearly busy wrangling my crew and in a hurry, that's when these answers run through my head.

Random Stranger: Are those triplets?
Me: Yes

RS: Are you sure?
M: Pretty dang sure. I clearly remember seeing three babies on the ultrasound, and saw three babies get taken out during the c-section.

RS: Did you know you were having triplets?
M: We knew we were having multiples when I was 8 days pregnant. (This is true!)

RS: Do triplets run in your family?
M: Yeah, they run all over the place. Can't you tell?! Hey, kid! Get over here!

RS: Are they natural?
M: No, we plug them in at night. They are robots.

RS: No, I mean, did you do fertility treatments or were they spontaneous?
M: Why do you want to know? (This is actually a good answer. Sometimes people are curious because they have been dealing with infertility, and I am happy to answer any and all questions about that.)

RS: Oh, I was just curious.
M: Yes, we tried for about 2, 2 1/2 years to get pregnant and needed some assistance. Let's talk about your sex life and medical history now!

RS: Are they all from the same father? (yes, I have been asked this!!)
M: Seriously?!?!?!?!

RS: They are so cute! Are they all identical?
M: Well, I have two girls and one boy...

RS: So, are they?
M: You obviously failed biology, didn't you? A boy and a girl can't be identical. Remember that line from "Kindergarten Cop"? "Boys have a..."



RS: Oh, ha ha. Right. I meant, are the girls identical?
M: Have you looked at them at all?! One girl has blonde hair and one has brown hair. You tell me.

RS: You have your hands full.
M: Yes. Yes, I do. I'm so glad you stopped me and my full hands to tell me that!


RS: If I had triplets I would kill myself! (Yes, I've heard this one, too.)
M: Did you really have to say that in front of my 7 year olds?! What are they supposed to think when they hear that?!

RS: How do you do it?
M: One day at a time, and with a lot of help from The Lord. (I actually say this.)
